I notice that All Parts' tele bodies are different from most major manufacturers' in that they have an extra channel connecting the neck pocket and rhythm rout. Another post on here revealed that this allows you to tweak the truss rod down there without removing the neck. Great idea! I wonder why other companies don't do that. Any issues with mechanical stability when that channel is added?

That's an original Fender spec from back when they had truss rod adjustments at the heel. I think there are a few reasons that other companies don't do that...
A) Most newer necks have top-adjust rods.
B) Some people don't want to use a pickguard.
C) It's an extra rout to make.
It's kind of like the fourth (diagonal wiring) rout -- most aftermarket companies don't put 'em in there.
I agree it's really nice to not have to remove the neck to tweak the rod. I've cut 'em in a couple of bodies I have that didn't have them already...
I don't know how much tonal difference it makes; my guess is not much...
BTW, USACG will do a body to vintage specs if you ask them.

I figured the answer might be something like that. I appreciate the knowledge you brought to the question. I probably won't use a pickguard, just a pickup ring. I'll have to see if that rout would look objectionable.
