Finicky MIM 60's Strat

I really love my Strat...I really do.
It's the first Strat I played that I bonded with,after years of avoiding them.
The problem comes with it maintaining playability. The neck is effected by the slightest change in tempature and humidity. It consistantly bows, and no matter what I do to the trussrod, it'll play ok , and then within hours it's high again, ( none of my other guitars are this sensitive btw...not even my Larrivee acoustic)
Is there some trick I'm missing that'll keep this neck true??
I've given up on the stock saddles too. I had a Graph Tech set on mack in March, but I tried the stock ones again. Last night they went back on again. The stock ones can't hold their height anymore and they cut chunks outta my hand.
BTW it's strung with 0.10's, the trem is flat against the body with the claw screwed down tight.

I have had this problem before on a white 60's Classic MIM Strat. What it did was when you play an E chord if you used a little extra pressure the strings would hit the frets real easy so the neck was what I call a weak neck.

I was able to return it so avoided that problem.

Yours sounds like the wood wasnt cured properly.

If your the original owner you might be able to work out a deal for a new neck talk to your dealer.
