Bigger always better?

Hello all in Teleland!
I have been wanting to get into amp building for a while now and finally decided to roll with the 5F11, knowing that there is no kit available for it. Ambitiously I figured that it would give me full reign over everything, but I didn't think about how bad this could potentially go when I ordered the turretboard....
I am pretty electronically handy when it comes to guitars, we will have to see when it comes to something a bit more complicated.

So a few questions:
1) The schematic and layout I found do not include the resistor wattages required. Do I just go as big as I can? Is there a benefit to going bigger than needed? Is there a danger to going bigger?
2) Do you guys/gals recommend anything that will make this project safer/better?

I can get a really great deal on mercury transformers, and I was planning on building a custom 1x15 enclosure for this thing. And I hope that tone tubby will be able to do a super cool alnico 15" speaker for me.

Power Section (Filter caps,dropping resistors): 2 watt metal film resistors are good to help reduced noise.

Output Cathode Bias Resistor: 5 watt ceramics
Preamp Cathode Bias Resistor: 1 watt or 2 watt metal film

Preamp Plate (anode) Resistors: 2 watt metal film (could go as low as 1/2 watt,
but larger resistors in this position help reduce noise.

All other resistors: 1/2 watt.

*Metal film are considered quieter than Carbon Comp., but carbons are supposedly geared toward "vintage" tone.

You can always go bigger, just don't go smaller below dissipation rating. However, bigger is more cumbersome and take up more room.

The cathode resistors on the 12AX7 's can be 1/2 watt, there is very little power through them and little voltage. A bigger wattage value resistor helps out on noise if the resistance is higher, these are low.

The danger of going bigger in wattage comments tells me you are pretty green so I would suggest reading this document.
