I have a cream/black covered Gibson Humbucker, says Gibson USA on the bottom and has an upside down "T" beneath the Gibson logo. 5 wires coming out, I have a voltage meter but I'm not sure which wires to test. I'm putting a SD Phat Cat in the bridge of my Les Paul, and I'd like to know what Gibson pickup this is and if it will pair nicely with the Phat Cat.

Hard to say but "T" is for treble meaning bridge.

Ah ok, would that throw the output off if I put it in the neck??
I noticed the adjustable screws are on the black cover, not the cream cover, so I ruled out a '57 Classic. So I guess it's gotta be a 498T or a Burstbucker.

Or a 500T; either way, it is more than likely that it will significantly overpower the Phat Cat at the bridge...you can try it out and see what you think. You might be able to lower it down enough to get a decent enough balance with the bridge - plus you can always turn down the volume on the neck position a bit to help compensate as well. Tonewise, it could actually sound pretty good when used together.
