Finishing options - request for opinions

Attached you will find a couple pictures of my current build. Hard curly maple top, sapele back. I'm wanting to do a cherry burst on this one. I have a 1/4" radius front and back. So I'm asking for recommendations.

I've mixed up some of preeb's red filler for the sapele. I don't want to trust tape alone, so I'm thinking of sealing the maple w/ lacquer before the filler application. So would you recommend...?

1) Yellow water-based stain in the maple, then seal with lacquer?
2) Seal the maple with lacquer, fill the sapele, and put all other color in the finish? (this seems like the preeb approach)
3) Do all top color by spraying stains directly onto the maple, then seal, then fill the sapele, then complete the finish?
4) Some other approach?
