Hello,
Just wondering if anyone knows how the three way switch on an esquire functions, as there is only one pickup?

The switch just chooses between three different tone control configurations. There are any number of ways to wire them, but the classic is:
Forward -- A bassy sound.
Middle -- Normal Telecaster sound.
Rear -- Bypasses the tone control, very bright.
And, yes, you need an Esquire.

I agree with dsutton. It's more than a telecaster without a neck pickup. It's a totally different animal. If you play one at a good volume, the differences will become apparent. They are beasts.

If you do, try the Eldred mod in the bassy position. And why not add a switch to have two different caps in the middle position to choose from? Good luck you are in for a real good time with an Esquire:-) it is really something else than playing a Tele.
