I found a really cool old martin classical guitar, but it needs a bridge replacement. I would like to do this next time I'm in Nashville, because we don't really have any luthiers around where I live. So my question how long my guitar will have to be in the shop? I'm assuming the glue will have to dry for several days before It can be restrung, and what if a new bridge has to be made from scratch? Anybody ever had an acoustic's bridge replaced?

yes, depending on the workload variable at the given shop, mine took a week.

Thanks. Can Anyone Guess-timate around how much this should cost?

$100, give or take. If you get scratch- made bridge, $200-300, give or take again.
