Picked up an Epiphone Masterbilt AJ500M which I'm pretty impressed with. The crappy tuners, not so much. Any suggestions on an upgrade that will fit without (or with little) modification? I was looking at some Rotomatics but they only have one mounting screw where the Epi's stock Grovers use two. Anybody else changed their's out?

I am of the school that if ain't broke...
If you're having tuning issues, 99 percent of the time, they can be traced to the nut. Either poorly cut or needs some graphite -- pencil lead -- in the slots.

I've checked and lubed the nut, and the saddle looks OK. Maybe its just the 18:1 ratio that I'm not used to, but its difficult to get it at proper pitch, its seems like I have to turn them a long way just to make small adjustments, and they don't seem to be very accurate. The strings are new and I've tightened all the screws. Seems like the G string tuner is the worst, it may be defective.
