I used Deft clear natural oil finish on my body (hickory) and it turned out great!
So I want to do the same with the maple neck.

My question is, how do I not get oil on the fingerboard (rosewood). Will taping it off be sufficient? I'd appreciate any pointers.

When I tape off a fingerboard, I use quality automotive masking tape. I start at one end of the neck, and press it down so that it stick to the fretboard on both side of the fret. If you run the tape the full length of the fretboard, then try to push the tape down along the frets, it creates a tent effect around the frets, and oil/lacquer can get in there.

When you apply an oil finish, you can control where it goes easily, so it wont be a bit problem. If you get any on the board, you can simply scrape it off with a pocket knife.
