Normally I'm a bit of a stickler for the receipe, but tonight I flew by the seat of my pants and did a chicken stir-fry in the wok, with a honey-soy-ginger-sugar-chilli sauce and whatever veges were in the fridge. Turned out pretty good IMHO :grin:

Those are the steamed burgers I've seen on TV then... I suppose I would try one. I'm not sure about square burgers... I think I would feel better about it all if they had square buns.

Just remember to go hide when it comes time to wash the casserol dish. There isn't a dishwasher in the world that will clean it. I usually pick that time to sing holiday songs for the grandkids!

Last night's leftovers - our son and daughter came over and cooked a dynamite meal for their mom and me. BBQ'ed Tri-Tip, blackeyed peas, collard greens. And one of the best pecan pies anywhere. (OK, they bought the pie. But it tastes as good and home made as the ones my wife's mother used to make.)

I just HAD to photograph my dinner tonight... before it was devoured....:mrgreen:

it turned out tops!....

first time I did it this way I grilled it (overhead).turning it a few times .. I refined it a bit and this time I baked it for 1/2 hr...

much the same result.... successful experiment.... slightly modded....:cool:

*I got a chicken breast ,side sliced it to make a pocket/butterfly.. smeared it inside with chilli coconut sauce... laid a big silver beet leaf on it...
added some cashews,shallots garlic,,cheese,pepper slices, italian spices, a slab of butter...
closed just the leaf over.. then laid the rest of what I'd chopped on the leaf top folded over... a bit more cheese, pepper,butter, drizzle of oilve oil drizzle ...

then folded the chicken over to close it... then wrapped it in 3 big slices of bacon and skewered it up in a few places to hold it together...

then I put it on some foil on a pizza tray in a 200C oven... rolled the foil sides up to hold the juices but left the top open to crisp the bacon... turned it once in the half hour....
let it rest a few minutes.... then EAT..... mmmmm :smile:

Perfectamundo!!!.... veges cashews soft inside , chicken just done (not pink).. bacon and cheese crisped on top....
a bowl of basmati rice.... for stodge... I should have done a gravy to pour over... dohhh!!!!!!.... too hungry..next time..

been sanding and filling ,oiling , body/neck today.. I forgot lunch.. and I smell like turps...sweet..:twisted:

this is a winner.....:grin:

Tonight it was ricotta & spinach stuffed cannelloni tubes, served with garden peas and roasted, potato & carrots and a couple of chipolata sausages for protein. I need protein.

Best Ever home made Mac & Cheese;

1-'brick' Velveeta cheese
1-can Campbells Cheddar Cheese soup
1-can jumbo whole black olives
1-can mild green peppers
1-14.5 can flavored diced tomatos (your choice)
2-13.5 oz cans sliced mushrooms
2-cups milk
1/2-cup butter
1.5-2 lbs ground beef
1 lb bacon
2-large sweet onions
1-16oz box macaroni elbows

1)Chop up the olives and the green peppers. Slice the Velveeta into 1/2" slices.

2)Get a large pot (you'll need it) and put everything in (I add about 1/3 of a can of the juice that the canned stuff is in, only 1 can in the case of multiples). Stir well to mix the milk and Campbells soup in with the rest. I sprinkle Old El Paso Taco Seasoning across the top just enough to cover it. A dash of salt (to taste) and grind some pepper in too, re-mix and let set.

3)cook the burger and then chop the onions and grill them in the beef fat. Add it in with the stuff already in the pot (I add a 1/4 cup of the rendered fat).

4)slice the bacon into 1 1/2 inch strips and cook, I add about a 1/4 cup of the fat as well, add it in.

5)cook over medium heat, stirring regularly. Watch that the cheese melts but doesn't stick. When the cheese starts to melt reduce heat and stir occasionally, when fully melted reduce heat to simmer and cover about an hour or until you can smell it through the house. Cook the macaroni, drain and rinse with hot water, let it sit for about 5 minutes to get the water out and shake it around occasionally to drain it all off. Mix the Macaroni in and serve up. It's even better the next day (re-heats in a microwave real nice). I came up with this some years ago.

tried my hand at oriental tonight.. i cooked for my wife. We had fried rice with chicken.. homemade hibachi.. it was great. she made the sauce to dip the chicken in though.. you know that pink hibachi sauce.. she figured it out.. Haha she's great.

Went to a bbq for New Years' Eve and tonight had apricot chicken (not bbq'ed) just for a change.

Oh, we did have a bbq for lunch though.

Mediterranean Chicken
Created by Me

Mediterranean Mix;
1/32 - tsp. Liquid Smoke
2 -tbsp. Balsamic Vinegar Aged
3- Pinches White Pepper
3 oz. sun dried tomatoes
6 – lg. Baby Portobello Mushrooms Sliced
4 – tbsp. Cilantro Base
4 – Pc. Thick bacon Slices 1” X 1” Fried separately
5 - tbsp. EVO Dill Enhanced (or EVO and add some fresh Dill to the mix ¼ tsp.)
5 – Whole lg. Roma Tomatoes
12 – Whole Black Olives
6 – Black Olives Sliced
8 – Chicken Thighs Skinless
1 Jar 12oz. Artichoke Salad with Pimentos and Green Olives
16 oz. Chicken Broth
¼- tsp. Capers Peppercorn Style
¼ Green Onion Tops Chopped to add later.
5 – Green Onions cut from mid-green down
1/8 - tsp. Fresh Ground Black/Green/Red pepper
5 – Lg. Garlic Cloves Crushed and Chopped
½ - tsp. Sea Salt
One small box Swanson’s Chicken Broth
This will require some LARGE pans.
Add all ingredients together as you open it including fluids from jars into a well aged large black iron skillet and slooooow cook.


Chicken;
1/8- tsp. Minced Fresh Ginger, add in the last five minutes
6 – ½” wide slices of Yellow or Orange Bell Pepper add in later.
2 – Large Garlic Cloves
Pinch of freshly sliced/chopped Ginger Root
3 – Tbs. EVO
1 – Pinch White Pepper

Bring to heat a large frying pan and flash fry chicken both sides
Reduce heat, slow cook; once ¾ of the way cooked add to above mix and simmer cook until Chicken is cooked.
Add in the rest of the Ginger, Rosemary, Yellow Bell Pepper pieces and Green Onion tops, perhaps some additional Chicken Broth.
Continue to simmer for another 30 minutes or until the green Onion is semi soft,
Umm, and a good Shiraz or Beaujolais and enjoy…

Gumbo from scratch. The Okra, tomatoes, peppers, onions, and garlic all came fresh from the garden. The sausage and chicken from Sam's. :)

I took my time with the roux, got it dark and nutty. Cooked it all slow.

Braised Pork Loin with Red Beans and Rice.....:grin:

Dry rub the loin let stand over night..

1 - can of crushed tomatoes

2 - cans of light red beans

3 - clove minced garlic

1 tsp - Oregano

1 tsp - parsley

2 tsp - file'

1 pouch - Goya ham bullion

salt

my great grandmother's cast iron pot...

dumped all but the loin in the pot, started to simmer on low.
seared the loin for about 3 minutes, max, then put it on top of the other fix'ns to braise in; covered, in a 350 oven for 40 minutes. remove loin, cover and rest to finish cooking. continue cooking the beans for about another hour.

I like the loin sliced thin, cause that is probably my favorite sandwitch meat other than a turkey/salami combo.

Lemon Dill Chicken
3 large skinless/boneless chicken breasts
3-Tbs. Capers
1-tps. Fresh Dill chopped
4-Tbs. Lemon juice
3 to 4-Cups fresh Spinach chopped
¾ stick salted butter
1-Tbs. Adobo Lemon Pepper seasoning
3- Drops of liquid smoke

At low heat;
Place butter into a large black iron skillet allow to melt
Thrown in the rest of the ingredients except the chicken
Wait until the Spinach is partially welted then throw in the Chicken Breasts
Continue to cook a low heat until the chicken loses its pink color thru out. Done.
Steam some veggies, some white wine of choice……

Ya gotta wonder about the meaning of that. The presenter might hope they get some credit for their effort, even though they really don't know the recipient's birth date?? LOLZ. :razz:

I wonder also, about of the quality of language skills of the people in our service industries anymore. I work for a large corporation, one that can well afford to contract knowledgeable, quality people. Out back of my building, we have a paved area where we store stuff that might leak oil. The equipment has to be kept in a designated area. So the area just got re-sealed, and re-striped. The designated area, in lovely, bright, brand-new-yellow paint, now reads:

OIL FILLED ECUIPMENT ONLY

YEESH! :roll:

Back on subject, I made baked penne pasta and Italian sausage in a Parmesan cream sauce last night. Had a little leftover red sauce so I tossed that in as well. So, kind of a pink sauce actually. Awesome stuff.
