Why do some amps use a single pole single throw switch only on the hot wire and some use a double throw switch on both hot and neutral?

The double pole is safer, slightly. It saves you if the socket yoiu are pluged into is mis wired and you think you have removed power by turning the switch off.

I am sorry but I have to correct you on this one.A double pole switch is always safer.The outlet could still be wired the wrong way.I wouldn´t even think of using an amp with a single pole switch.It is even more dangerous in Europe where you´re able to put the plug in the outlet two ways.Since the voltage is 230-240 volts you get twice the current through your body.Is it legal to use a SPST as powerswitch in an amplifier in the States?Limbe

In theory that's true, but as noted outlets could be wired the wrong way. I've played on stages that were probably not wired by licensed electricians, so it's a concern in the US as well as Europe. In your home or in a studio situation, it's probably something you would not worry about.

As far as I know, in the EU, switching both sides is required.

There's no reason not to do it. Other than saving a few cents on the switch and a few minutes on the extra wire, why would anyone take the cheap way out?
