I HATE when my knobs wiggle. I love when they feel rock-solid and when the switch has 3 stout, distinct positions and doesn't wiggle while in one of its positions.
How can I ensure that I order non-wiggling pots and switches?

Screw them on well? Seriously, I used good parts (CTS solid shaft pots, CRL 1452 switch and Fender knobs), screwed them on well and mine are fine.

If it really bugs ya...I would suggest using the EP series Brass shaft CTS pots w/o the dished bottom, they are a little more quality feeling, but some don't like em, cause they turn a little stiffer than the alum. shaft dished bottom ones like Fender uses....As to switches, you might like the Oak-Grigsby switches over the CRLs, for a smoother feel ? (I do)
