Yummy! ibobunot September 15th, 2010, 06:19 PM http://farm5.static.flickr.com/4152/4994437774_bd52ccccc9.jpg http://farm5.static.flickr.com/4131/4994441022_fc273b0205.jpg tgfmike September 15th, 2010, 06:29 PM http://4.bp.blogspot.com/_gDfnr6h3ge8/TIACXqmHqAI/AAAAAAAAAQA/eeXG2qYcvCg/s1600/croppergetimage%5B1%5D.jpg April Ravenscroft’s drunken baby back ribs This was the 3rd Place winner of 2010's Evan Williams bourbon cooking contest at the State Fair. 1 rack of baby back pork ribs (approximately 4-5 pounds) Drunken marinade Drunken sauce Drunken marinade: 2 tablespoons bourbon 2 tablespoons liquid smoke 1 tablespoon light brown sugar 1 tablespoon garlic powder 2 tablespoons onion powder 1 tablespoon smoked paprika 1/4 teaspoon ground coriander 1/4 teaspoon chili powder 1/2 teaspoon salt 2 teaspoons black pepper 1/4 cup root beer Drunken sauce: 1 cup bourbon 1/2 stick salted butter 1/2 medium red onion, finely minced 3 cloves garlic, finely minced 1/2 cup apple juice concentrate 1 6-ounce can tomato paste 1/4 cup ketchup 2 tablespoons molasses 1/2 cup light brown sugar 1 tablespoon honey 2 tablespoons liquid smoke 1 tablespoon smoked paprika 1/2 teaspoon chipotle chili powder 1 1/2 tablespoons apple cider vinegar 1 teaspoon salt 1/2 teaspoon ground black pepper Prepare ribs by rinsing with water, pat dry and removing membrane along backside of ribs. (I found a pair of pliers helped grip the thin, but resilient membrane, which pulled off in a sheet. Discard membrane.) In small bowl, whisk together all marinade ingredients. Place ribs and marinade into oven-safe cooking bag, and seal. Massage marinade into ribs. Place ribs in refrigerator overnight (8-10 hours). Place cooking bag into oven on a cookie sheet, and turn oven to 400 degrees. Do not open oven. After 40 minutes, turn oven down to 200 degrees and cook for 2 more hours. To make drunken sauce: Heat a saute pan over medium high heat, add in 3/4 cup bourbon and allow to simmer until bourbon reduces to about 1/3 cup. Whisk in butter, onion and garlic, and simmer for 3 to 5 minutes. Whisk in all other ingredients, and simmer over medium-low to medium heat for 15-20 minutes. Remove ribs from oven and from cooking bag. Reserve liquid remaining in cooking bag. Add this reserved liquid to the drunken sauce, and bring to a boil, cook for 5 to 6 minutes. Remove from heat, and stir in remaining 1/4-cup bourbon. Put half of drunken sauce in bowl for serving later, the other half you will use as the glazing sauce while ribs cook on grill. Heat gas grill to 300 degrees (or heat broiler to high). Brush ribs with glazing sauce, and place them on grill over indirect heat (or under broiler). Cook, turning ribs every 10 minutes and brushing top side liberally with glazing sauce when turned. Ribs are done when the meat has shrunken on rib bone, meat is nicely glazed, and a knife slides into and out of the meat without catching. Remove ribs from grill, and allow them to rest for 8 to 10 minutes. Cut ribs between bones, and serve with drunken sauce and your favorite bourbon cocktail.
