Tom Mitchell's 'How to Service Your Own Tube Amp--a Complete guide for the curious Musician' is a good one, and Dave Funk's 'Tube Amp Workbook' is a bit further along in its approach.

A Desktop Reference of Hip Vintage Guitar Amps by Gerald Weber. It's very interesting and informative.
