PUP upgrade for MIM Strat

I want to replace all three stock pickups in my MIM Fender Strat. When I popped off the pickguard, I noticed the body is pre-routed for a humbucker by the bridge. I'd like to take advantage of that.

I'm looking for a bluesy growl for rhythm guitar and e-string strumming. i'm not a shredder. I listen to a lot of Drive-By Truckers, Old 97's, Chris Isaak, George Thorogood. If I could live in the opening track to "The Hangover," I would. I'm sure picking up a Telecaster or an archtop with double humbuckers would be a great idea, but I'd like to start small.

Can anyone recommend either 1 humbucker for starters or 1 humbucker and 2 single coils?
