Blood sausage! I had some Phillipine (sp!) blood sausage several years ago .. man, it was spicy! They make a good one.

Going back to liver, my mother used to make a liver casserole: ground beef liver, rice, and raisins. I know it might sound kinda gross, but it's a staple in Scandinavia. It's akin to a hot dog dinner in NA.
