Do you mean those bally things? That's what we call them here, lamb fries! Out west they eat prairie oysters ... hmm ... you know what I mean, eh?
I don't mind steak and kidney ... it's been years though. Good pie dough is hard to find ...
Organ meats ... my boss used to love sweetbreads, a friend with a restaurant couldn't get enough brain and lungs, and tripe is still on some menus here. One day I go to his restaurant and he's got a cooked pig head on a plate, picking away at the cheeks and what have you! I wish I had a picture!
