Do a search for free midi songs (add the genre of your choice) and you'd be amazed at how much is out there, some are great, some not so great... save the file as a source (midi code) file, then drag into Garageband, and watch it break into individual tracks, each with its own instrument. I turn off the guitar parts (and a fair number of other tracks) and tweak some of the others (on The Thrill is Gone, I turn down the strings-too loud!), maybe change the kind of piano used, etc., then export the file as audio...
