And what pedals are people using to create "ambiance" or "colour" on top of what the band are doing? I've been trying the Modulate function on the Boss DD-7 but don't want to take away from people worshipping but want to add something.

I put my volume pedal after the od/distortions, and before the delays. That allows me to have control over the gain level, and also lets me fade out while the delay trails off. Putting it first in the chain didn't work for me, as that controls the output from the guitar, which can weaken the gain when you don't always want it too. I use the guitar's volume knob for that. I find I really need to have control over my volume levels at church - if I was in a club, I could probably crank it, set it and forget it, but not so much at church.
As for coloring stuff, I use delay, usually with Modulation, sometimes tremolo, and I use my MXR Phase 90 quite a bit, that thing covers quite a bit of sonic ground. I'll use chorus sparingly now and then.
