7#9 chords
To my knowledge, The Man -- Steve Cropper -- used only the basic dominant seventh chords that you probably already know.
The Bb7#9 is more likely a result of Steve's two-note "smears" against the Bb bass note and the F organ note.
You should be fine with basic seventh chords.
