You bring up a good point. Nowadays, I come into the studio at night, and it's just the producer, engineer, and me. I don't even meet the artist 80% of the time. Sometimes they send me the finished product with a thank you note, or maybe a phone call. Back then, it was more of a group effort, with more than enough players. I bet we would be surprised how much that "grab and instrument and lay down a track" construct occurred.
